Protein Peanut Butter Chocolate Stuffed Waffles

Love the gym but don’t want to give up a brunch favorite? Good news: you can have your waffle and eat it too. These Wonderffle chocolate stuffed waffles are packed with protein, low in fat, and are (mostly) naturally sweetened. Each serving is packed with 38g of protein so you can brunch and build muscle at the same time.
This recipe is very chocolate-y and filling and only has sugar added from the chocolate chips. The powdered peanut butter instead of regular peanut butter gives the rich peanut flour with ⅓ less of the fat of usual recipes.
Ingredients
- 1 ½ cups all-purpose flour
- 1 ½ cups unsweetened almond milk
- ¼ cup unsweetened cocoa powder
- 2 eggs
- 2 scoops chocolate whey protein powder
- 1 tablespoon baking powder
- 1 teaspoon salt
- 9 tablespoons (125 grams) semi-sweet chocolate chips
- 2 tablespoons vegetable oil
- 6 tablespoons powdered peanut butter (ground defatted peanuts)
- ½ cups unsweetened almond milk

Directions
Prepare The Batter
- In a large bowl, whisk eggs with almond milk.
- Mix in dry ingredients: our, cocoa powder, chocolate protein powder, baking powder, and salt. Combine until the batter is smooth and there are no lumps.
Cook The Stuffed Waffle
- Preheat the Stuffed Waffle Iron and spray with nonstick cooking spray. Add about ½ cup of the batter once it is warm. Sprinkle 3 tablespoons of chocolate chips, then cover with about ½ cup more batter and close the cover.
- Cook over medium low heat for about 6 minutes and then flip, cooking for another 4-5 minutes. Make sure both sides are a little soft but hold their shape. Remove from the heat on to a plate. Repeat with the remaining batter.
- While the stuffed waffles are cooking, make the peanut butter drizzle. In a small bowl, whisk together powdered peanut butter with almond milk until there are no lumps.
- Drizzle stuffed waffles with peanut butter drizzle. Enjoy warm!
