Ingredients
- 2 cups all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder
- ½ tsp salt
- 1 ¾ cups milk
- ⅓ cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups leeks, thinly sliced
- 1 large onion, thinly sliced
- 1 tbsp garlic, minced
- 1 tsp salt
- 1 tsp black pepper

Directions
Heat a cast iron skillet to medium heat. Drizzle with olive oil and add the leeks and onions. Season with salt and pepper and stir to combine. Cook until the leeks are soft and the onions are translucent.
Add the garlic and cook for another minute. Adjust the seasoning and remove from the heat. Transfer to a plate and set aside.
In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined. Set aside.
In a separate bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract.
Pour the wet ingredients into the dry ingredients and whisk until just combined. Don’t overmix, some lumps in the batter are okay.
