Ingredients: 1 pound pork shoulder steaks; ½ cup orange juice; juice of 1 lime; ¼ cup olive oil; ¼ cup chopped cilantro; 1 tablespoon chopped fresh oregano or ½ tablespoon dried; 1 tsp cumin; ½ tsp coriander; ½ tsp chili flakes; 2 cloves garlic, grated; ½ tsp salt; 1 cup maple syrup; ¼ cup mustard; t tbsp sambol chili paste; 2 cups all-purpose flour; 2 tbsp sugar; 1 tbsp baking powder; ½ tsp salt; 1 ½ cups buttermilk; 2 eggs, medium; ¼ lb sliced ham; 1 cup grated Swiss cheese; 2 dill pickles, sliced thin

Ingredients

Pork

1 pound pork shoulder steaks
½ cup orange juice
juice of 1 lime
¼ cup olive oil
¼ cup chopped cilantro
1 tablespoon chopped fresh oregano or ½ tablespoon dried
1 tsp cumin
½ tsp coriander
½ tsp chili flakes
2 cloves garlic, grated
½ tsp salt

Sauce

1 cup maple syrup
¼ cup mustard
t tbsp sambol chili paste

Batter

2 cups all-purpose flour
2 tbsp sugar
1 tbsp baking powder
½ tsp salt
1 ½ cups buttermilk
2 eggs, medium

Everything Else

¼ lb sliced ham
1 cup grated Swiss cheese
2 dill pickles, sliced thin

Directions

Prepare The Pork

Mix the pork in a large bowl with all the marinade ingredients.
Allow to rest for at least 1 hour or overnight.
Bring a frying pan up to medium high heat with a little oil.
Add in the pork and cook to brown on each side and cook though, about 3 minutes per side depending on thickness.
Move to a cutting board and cut into thin strips.

Prepare The Sauce

Mix together the sauce ingredients.
Taste and adjust the ratio if desired to your personal tastes.

Prepare The Batter

Mix all the ingredients in a large bowl until combined. Set aside.

Cook The Stuffed Waffle

Place The Stuffed Waffle Iron on the burner and pre-heat it on low to medium low temperature.
Add in some batter about halfway up.
Put a few slices of ham on top, then the cheese, then pork and pickles.
Push the mixture down so it is near the bottom of the iron.
Top with more batter to fill it up and close the cover.
Close the waffle iron, flip it, and cook on medium-low for about 6 minutes on each side. When done, turn the heat off, open the top pan, and remove the cooked stuffed waffle using the center pan.
