Directions
Prepare the batter
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined. Set aside.
- Whisk together the milk, vegetable oil, eggs, and vanilla extract in a separate bowl.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Don’t overmix, some lumps in the batter are okay.
Prepare the filling
- In a mixing bowl combine the shrimp, olive oil, old bay seasoning, black pepper, and parsley. Stir to combine.
- Heat a non-stick skillet to medium heat. Add the shrimp and cook on both sides until opaque. Remove from the heat and set aside.
- To make the grits, bring the water and broth to a boil. Stir in the grits, cover, and continue cooking on medium-low heat. Stir occasionally until the mixture is thickened, about 5-7 minutes.
- Remove from the heat and stir in the black pepper, cheddar cheese, and hot sauce if using. Adjust the seasoning and transfer to a plate. Set aside.
Cook the stuffed waffle
