This classic and loved by all breakfast is the best solution for busy mornings and big families. The flavorful shrimp stuffed in a pillowy and soft waffle served over cheesy grits is extremely delicious and filling.


To make this delicious and classic recipe all you will need is a traditional waffle batter, shrimp and quick grits. Stuff the waffles with seasoned shrimp and serve cook to crispy on the outside and soft on the inside perfection. Then make the grits to your liking and serve the waffle over it with fried egg and chives on top.


With each bite, you will experience the contrasting textures and flavors that make this dish truly remarkable. The crispiness of the waffles pairs beautifully with the creamy and cheesy grits, while the succulent and spicy shrimp adds a delightful burst of flavor.

Ingredients

    Batter

  • 2 cups all-purpose flour 

  • 2 tbsp sugar

  • 1 tbsp baking powder 

  • ½ tsp salt 

  • 1 ¾ cup milk 

  • ⅓ cup vegetable oil 

  • 2 large eggs

  • 1 tsp vanilla extract 

  • Filling

  • 1 lb shrimp, cleaned and cooked 

  • 2 tbsp olive oil
  • 2 tsp Old Bay seasoning 

  • ½  tsp black pepper 

  • 1 tbsp fresh parsley, minced 

  • 1 ½ cups water 

  • 1 Cup quick grits (not instant grits)

  • ½ tsp black pepper 

  • ¾ cups cheddar cheese, shredded 

  • 1 tsp hot sauce, optional

  • fried egg, for serving 

  • chives, for serving

Directions

    Prepare the batter

    1. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined. Set aside.

    3. Pour the wet ingredients into the dry ingredients and whisk until just combined. Don’t overmix, some lumps in the batter are okay.

    Prepare the filling

    1. In a mixing bowl combine the shrimp, olive oil, old bay seasoning, black pepper, and parsley. Stir to combine.
    2. Heat a non-stick skillet to medium heat. Add the shrimp and cook on both sides until opaque. Remove from the heat and set aside.
    3. To make the grits, bring the water and broth to a boil. Stir in the grits, cover, and continue cooking on medium-low heat. Stir occasionally until the mixture is thickened, about 5-7 minutes.
    4. Remove from the heat and stir in the black pepper, cheddar cheese, and hot sauce if using. Adjust the seasoning and transfer to a plate. Set aside.

    Cook the stuffed waffle

    1. Heat the Stuffed Waffle Iron to medium heat and brush with a little olive oil. Pour ⅓  cup of the batter into the bottom waffle pan to cover the waffle grids.

    2. Add the shrimp.

    3. Cover with more waffle batter to fill to the rim of the bottom pan. Close the Wonderful and flip. Reduce the heat to medium-low. Cook for 6 minutes on each side.

    4. Layer a plate with some of the grits. Place the cooked waffles on top and top with more grits and an egg if desired. Serve immediately.
