Ingredients

½ cup egg whites
½ cup spinach
¼ cup diced yellow onion
2 tbsp feta cheese
Pinch salt and pepper
Light drizzle of olive oil

Directions

Assemble ingredients. Preheat a skillet with olive oil to medium heat.
Add yellow onion and cook until translucent, about 4-5 minutes. Add spinach and cook until wilted. Lightly season with salt and pepper.
In a large mixing bowl, whisk egg whites with an electric mixer until they reach soft peaks.
Preheat the Wonderffle iron to medium heat and lightly grease with nonstick spray. Add half of the egg whites.
Spoon the cooked vegetables into the center of the egg whites and add feta cheese.
Top with the remaining egg whites and close to cover.
Cook for 5 minutes, then flip and cook the other side for 4 minutes.
Remove the waffle from the iron and enjoy!
